It smoothens the camera movement, you can see the difference by moving your camera with it on / off

usually when you move your mouse your camera quickly responds along with your mouse,

camera interpolation lessens that, making have a smoother movement from where your camera was previously to where it is supposed to be now

in short, turning it off means your camera will be more responsive, allowing you to change camera angles quickly while you do jumps,etc

this is good for platforming cause having the camera glide along while you are trying to make a jump can be very annoying, noticeable when you are playing first person.

overall bopimos camera interpolation isn't that bad actually imo ( had to turn it on again to see what it was like again lol ) , though I think it's preferable to just turn it OFF.
